Everything about this delicious little treat sounds perfect for summer! From the no-bake part to the icebox, coconut and cupcake part, these sounds amazing for those hot summer afternoons on the patio with friends. Having a terrible relationship with dairy I’m going to try substituting the cream cheese for silken tofu and I plan to use Go Dairy Free’s recipe for soy based whipped cream (this recipe is also gluten free!).
