Chicken Avocado Ranch Enchilada

Who doesn’t love Mexican?  Raise your hands and then be prepared not to receive a holiday card from me!  Haha, just kidding,we all know my specialty is Indian food!  Anyway, Sweets loves Mexican and so that kind of means that I love Mexican now, or at least that I’ve developed a love for it out of a desire to not be a Picky Peggy. Enchiladas are one of my favs, especially since I’ve kind of burritoed myself out over the last couple of years, and ranch dressing is another one of those things I rarely have and love.  Click here for the recipe and don’t knock it until you try it, ranch is great, especially on anything.

Pavlova with Lemon Curd and Mixed Berries

I just bought a big jar of lemon curd and I keep spreading in on my toast, which I know isn’t really that healthy since there’s enough sugar in there to put an elephant into a diabetic coma, but I don’t really care.  I love lemon curd.  A lot.  I also love meringue and indulging every once in a while in something completely decadent and ridiculously sweet.  Lemon curd and heavy cream atop a pillow of meringue, topped with your favorite fresh berries; get the recipe here and show me how the piggies eat!

Italian Breakfast Cakes

Hey, did you know that Italians eat cookies and/or cake for breakfast?  Well neither did I until Elizabeth Minchilli in Rome’s blog post where she shares this little tidbit of cultural whatnot and also two Italian breakfast cake recipes.  Believe it or not the cakes aren’t all that bad for you, better, if you think of all the sugar in most cereals (especially granola!).  Click here for the recipe and enjoy!

Garlic Bread

Nectarine Galette

A galette is a round, flat cake with fruit on top.  Galette, the word itself is derived from galet, a pebble weather-worn to the shape ideal for skipping.  Nectarines are my favorite fruit and I love anything fruit, crust, sugar and baked involving so this is going to be an all-time favorite of mine, I can tell already!  Click here for the full recipe.
